Roasted Red Pepper, Onion and Swiss Cheese Quiche




I love this blog because I step outside my comfort zone all the time in the kitchen and then I realize I should have done it long, long ago. Ive never made quiche before, Ive ordered it in resturaunts , but never made it before. It couldnt have been easier and although my son didnt like our selection of add ins in the quiche tonight, he liked the crust and I am sure I can come up with some other combos ie deli meat, bacon, veggies that he wouild like.
I have to admit I didnt make my own crust, that is on my list of things to do next. I just didnt have time and truly the crust I got at Aldi was good and easy and two crusts came in the package, so we will be having another quiche or pie in the very near future.
heres the recipe, short and sweet

Ingredients
1 pie shell
4 eggs(two whole eggs, two egg whites)
1 large red pepper
1 half onion(sliced thin)
1/2 cup milk
2 sliced swiss cheese cut into pieces(size of a dime)
salt and pepper to taste

wash pepper and bake at 350 for 20 minutes or until pepper begins to look slightly shriveled
remove from oven and place in plastic bag
let sit for 15 minutes, remove and carefully peal skin off, and dice peppers
in a skillet heat oil and saute onions until glassy
add peppers last few minutes of saute
in seperate bowl crack eggs, whisk in milk
add pepper onion combo and swiss cheese
salt and pepper to taste
pour into pie shell
bake in oven for 20-30 minutes or until the top of quiche is golden brown
let stand 5 minutes and cut into pie shape pieces

Egg McJoe Sandwich - a microwave meal in 3 minutes $ 1.55

Few among us can say they’ve never partaken in a McMuffin sandwich. They are sort of a staple in the breakfasting world for those on the go. Here’s the homemade version you can - before you leave. In fact, making yourself one of these McJoe sandwiches (which even your average Joe can do, by the way) will more than likely save you time over even the drive thru. The whole sandwich comes together in just over three minutes. You will feel so good about this sandwich: You made it yourself, it’s wholesome, It’s inexpensive, and when you make your own coffee to go with it instead of ordering up one of those mega-expensive super calorie-laden drinks, you’ve really impacted your budget in a great way.

I thank my husband regularly for making me one of these when I'm scurrying off to the bus with the kids. It's a great warm pick-me-up that Joe makes me - and his is not just average - he's a pro at making this sandwich.


Egg McJoe Sandwich

(for one)

1 egg .15
1 egg white .15
Dash Black Pepper .02
2 strips bacon or 2 slices deli meat .60
1 slice cheese .45
1 english muffin, bagel, or 2 slices toast .20

Begin toasting your “bread”
Cook bacon between two sheets of paper towel on a microwave safe plate on medium high setting for 1 -2 minutes depending on desired crispiness.
Break open both the egg and the egg white into a small, microwavable bowl/cup (we use custard cups). Season to taste with pepper.
When the microwave is available, put the bowl of eggs into it. Cook on high for 30-40 seconds, remove the egg, “jiggle it” to move the liquid egg from the center to the edges. (you may flip it in the bowl if desired, not necessary). Continue to heat another 30 seconds.
Remove English Muffin from toaster, put slice of cheese on bottom piece of muffin, then bacon, then slide egg from bowl straight onto bacon. Top with upper bun, and Enjoy! It will be hot, so indulge with caution.

Pizza Quiche (yeap, really!) $2.07-yeap, really cheap!

Crustless Pizza topping Quiche

1 medium onion, diced .20
4 oz mushrooms .70
10 black olives .10
4 oz sausage (4 links - cut into small pieces) OR 2 oz turkey pepperoni, cut coins into wedges
2 large eggs .15
1/2 cup egg whites (4 egg whites?).30
1/2 cup flour .20
1/2 tsp baking powder.05
1/4 tsp salt.02
pinch cayenne pepper
1 1/3 cup non-fat or 1% milk.30
1 tsp pizza spice or italian seasoning .05

1/2 cup mozzarella .50
1 tbsp grated parmesan .10

1/4 cup pizza sauce

Preheat oven to 400 degrees

Lightly spray a 10 inch pie plate (or quiche pan)

in a medium frying pan, cook diced onion with a bit of cooking spray over medium high heat until transparent and tender. Add in olives, mushrooms and meat heat thoroughly. Set aside

In a large mixing bowl, whisk together eggs, flour, baking powder and salt. Whisk in milk, then meat/veg mixture.

Pour quiche into prepared pan, top with mozzarella cheese.

Bake 20 minutes, or until center is almost set and the outside edge is golden brown - sprinkle with parm and bake another 5 minutes.

Remove from oven and allow to set for 5 minutes, slice, and serve with 1 tbsp of pizza sauce on top.

Develed Eggs $1.50


We have talked about the incredible egg and all its nutrients, but we didnt discuss how versitile this little white gem is. Probably out of all our "convenient" store items, it is the most versitile. Eggs can be used so many different ways-scrammbled, fried, boiled,poached, over easy, in an omlette, fritata, quiche etc.... It is also used as an ingredient over and over again. Develed Eggs is another tasty and fun way to make eggss I "served" many of them while working at a Country Club in Highschool. They were a mainstay on the appetizer menu, and were one of the most popular items. I remember the chef putting the "filling" which consisted mainly of the yolks in a big pastry bag, and filling up each boiled egg white. He treated each egg like a work of art, and yellow yolk looked like gold velvet. So mine(hance, the picture) really didnt look like his, but I think they sure tasted good.

7 eggs .70
1/2 cup mayonaise .30
1 tsp prepared mustard.10
2 tsp pickled relish(optional).20
salt and pepper to taste .10
paprika for the tops of eggs.10

boil eggs, let cook and peal
slice eggs in half lengthwise
scoop out yolks and combine in bowl with mayo, mustard etc....
mix well until smooth
scoop into eggwhites
sprinkle on paprikaa

Walgreens Scrambled Egg Sandwhich $3.05


Heres a sandwhich that brings me back to my youth. I think it is actually one of the first sandwhiches I learned to make using the stove. Its again, quick and easy, and actually good for breakfast, lunch and dinner. Today it was a breakfast/lunch for us. My son didnt get up til after 9:30(gone are the days of rising with the sun) so he ate a big breakfast late because he was going golfing and would be gone 4 hours. I dressed the sandwhich up a little because I had some leftover ham from last week and shredded cheddar cheese, so the sandwhich was packed with nutrients.

This recipe yields 4 sandwhiches

8 eggs .80
1/3 cup milk .20
1/4 cup ham .35
1/3 cup shredded cheddar .60
pinch o salt
1 tablespoon olive oil .30
8 slices bread .80
total:$ 3.05

crack eggs in bowl and beat until a smooth consistant color
add milk, ham, cheese, salt
Heat skillet with oil, slowly pour in egg mixture and stir in pan evenly, making sure to lift sides constantly so eggs dont burn
as the eggs begin to cook, lower heat and fold eggs over slowly until eggs are light and flufy and cheese is fully melted

Egg Salad Sandwhich $2.25


Why is it I never make this salad/sanwhich? It is easy, and as we know -healthy b/c eggs are super uber healthy, and it is really good! It seems the only time I make egg salad is after Easter, when I have a couple dozzen boiled eggs that I dont know what to do with. Micheael looked at me kinda strangely when I plopped down this fluffy, yellow and white sandwhich infront of him, but nontheless, dug in and ate it, he even uttered an "mmmm, this is good" I could think of many ways too be funky with this sandwhich, or creative, but I figure for the first time on the blog, we would go just basic, and then slowly incororate other ingredients to jazz up an otherwise basic, straightshooter sandwhich.
You will need
6 eggs .60
1/4 cup mayo(lowfat) .30
8 slices of bread $1.20
pinch of salt and pepper.05

total: $2.25

Black Olive Diced Tomato Fritata $ 4.48


Yippee!! another egg dish! Seriously, I could probably do 365 days of egg dishes- no joke. There are just so many ways to prepare eggs: scrambled, fried, boiled, poached, sunny side up, over easy, in an omelette, quiche, strata, list goes on and on and on. The nutrition in eggs is incredible(all you old timers- do you remember "the incredible edible egg" compaign?) Eggs contain a high quality protein, iron, and zinc. For 70 calories per egg, eggs play a big role in weight management, muscle strength, and healthy pregnancies. Egg also cantain Vitamin A and Vitamin E. Vitamin A aids in vision and general cell growth, which aids in healthy skin, and Vitamin E, which is an antioxident that works well with vitamin C and selenium to prevent damage to the body from free radicals. For less then a .25 a day, so many nutrients can be consumed by cracking open the little white gem!
As I said, there are so many ways to consume and prepare eggs, I happen to love Fritatas because they are so easy. they are essentially like an omelette, except they are open faced and not folded over in the cooking process. So basically, I just throw everything I want in my fritata in a bowl, mix well and cook it up in a pan.
Today Im going for my favorite pizza topping- black olives, tomato, and mozarella fritata

you will need 4 eggs .44
1/2 lowfat milk .15
1 can diced tomato, drained $1.69
1 cup black olives $1.15
1/2 cup mozarella .65
salt and pepper
2 tsp oil(canola or olive oil).40

mix all ingredient in bowl(except for oil)
heat oil in skillet on medium
add mixture, with spatula move around tomatos and olives so they are even through out the fritata
slightly move the fry pan so the egg cooks evenly too.
as the egg gets cooked, the liquid will become less and less
for last 2 minutes, put lid on the fritata to ensure egg is cooked thoroughly.

Ham and cheese Omelette (Walgreens) $6.20


My son comes home from a sleepover the other morning and tells me his friends mom made the best breakfast ever. Ofcourse Im intrigued and annoyed when he cant really describe it. He said egg of some kind. OK, I needed to find out, because like myself, Michael is not much of a breakfast eater, and although for me personally, I just dont like a big breakfast, Michael is a growing boy and should do better then he does for his breakfast meal. So I question his friends mom and she laughs(probably thinking, what do you feed Michael in the morning that he is making such a big deal about a Ham and Cheese Omelette?) The moment she said it, I thought Walgreens. I just got eggs on sale $1.29 at Walgreens last week and I knew deli meat and cheese were both on sale this week, 2 for $5.00. Sunday morning bright and early I got the frying pan going and hoped my son would like my omelette as much as his friends moms. Did anyone ever notice their kids being much more open to trying other peoples food, then their moms?
Here is my version of a Ham and Cheese Omelette, made from ingredients I am certain can be purchased from any convenience store and obviously any grocery store. As Kim and I have stressed, if time or location is the issue, their shouldnt be any excuses to eat healthy and avoid fast food if possible.
Ham Cheese Omelette(this is ingredients for one large omelette of which my son ate an impressive 3/4 of)

3 eggs .30
1/4 cup of diced cheese of choice(we did swiss).50
1/4 cup of diced deli ham.50
1/4 cup skim milk.10
2 tsp olive oil or butter.15

$1.55
4 Large omelettes $6.20

in bowl wisk eggs thoroughly with milk
heat large skillet on medium, add oil or butter, when melted pour in egg, moving pan around so that egg is evenly spread in pan as it cooks
as the outside of egg starts to get golden, with spatula lightly start lifting its sides, so it will be easy to fold over when ready
before folding egg add ham and cheese to one side of omelette
loosen the other side with spatula and flip egg over and fold to make a semi circle
lower heat cook another two or 3 minutes so cheese will melt
place on plate and serve

Chilies Rellenos Bake $3.21

So I have no idea when I stumbled upon this recipe, but I know I've made it more than a time or two.  There are two versions...both of which I've included herein.  It's pretty much straight outta Betty Crocker, so it's hardly rocket science for Barbara or I, but never the less, we present... Chili Rellenos Bake

Chilies Rellenos Bake
4 large Eggs .32
1/2 cup sour cream .25
1/8 tsp salt
1 drop red pepper sauce .05
1 cup Monterey Jack cheese (4 oz).56
1 cup shredded Cheddar cheese (4 oz).56
1 can chopped green chilies, undrained.49

Heat oven to 350 - spray a 8 X 8 pan
Beat eggs, sour cream, salt, pepper sauce in large bowl with wire whisk.  Stir in cheeses and chillies, Pour into prepared baking dish
Bake uncovered about 40 minutes or util golden brown and set in center

Meanwhile, prepare
1 cup salsa .50
2 tbsp chopped cilantro.15
1/2 cup black beans (drained/rinsed).18
1/2 cup corn..15

When chilies rellenos bake is done, top with the salsa and serve.

A "Lighter Chilies Rellenos Bake" is presented in the cookbook...
it allows for 1 cup Egg Beaters and 1 cup of cooked rice instead of the cup of Monterey Jack cheese.  It also recommends using low fat versions of sour cream and cheddar cheese.

Crustless Spinach, Onion and Feta Quiche $1.66

Don't even know when or where I found this recipe, but it sounds interesting, and i dont have any other inspiration for tonight ...

this serves six, and has only 142 calories in your 1/6th of the pie (with non-fat milk)!

Crustless Spinach, Onion and Feta Quiche
1 medium onion, diced .20
6 oz. fresh baby spinach$1.20
2 large eggs .15
1/2 cup egg whites (4 egg whites?).30
1/2 cup flour .20
1/2 tsp baking powder.05
1/4 tsp salt.02
pinch cayenne pepper
1 1/3 cup non-fat or 1% milk.30
1/2 cup feta cheese.25

Preheat oven to 400 degrees
Lightly spray a 10 inch pie plate (or quiche pan)
in a medium frying pan, cook diced onon with a bit of cooking spray over medium high heat until transparent and tender.  Ad  in fresh spinach and cook until just wilted.  Set aside
In a large mixing bowl, whisk toether eggs, flour, baking powder and salt.  Whisk in milk, then spinach mixture.
Pour quiche into prepared pan, top with feta cheese.

Bake 25 minutes, or until center is set and the outside edge is golden brown.
Let set for 5 minutes, slice, and serve.

Sunday's Easter Apple Egg Bake $1.62

Perfect to whip up before the kids get up to find their baskets, then eat after mass (reheated slightly, of course!). 
Super easy, and something you can make at night and feed to your kids for breakfast on the way to school too!

Apple Egg Bake
2 cups sliced apples .50
3/4 cup rolled oats .30
1 cup 1% milk .20
4 egg whites .32
2 tbsp honey .15
1 tsp vanilla .10
1/4 tsp cinnamon .05
$1.62

spray a 9" square pan with cooking spray, then arrange the apples in the pan.
In a blender, finely chop the oats, then add everything else, processing until well blended.
Bake at 350 degrees for 35-40 minutes

excellent with whipped topping.

Cream of Green Vegetable Soup... & Egg Salad Sandwich $5.44

What a funny title!.

I've made tons of cream of (insert veggie) soup... I LOVE cream of asparagus, spinach, brocolli, mushroom, etc. soup.  Really, I have, and I do, and I shared my "basic" recipe with you a few weeks ago.  BUT...  I need to introduce a new recipe I found.  Neither Barbara nor I have tried this before, but you see, Barbara has a deep and profound dislike for "butter"... it's like the archenemy in her diet...she's certain that Butter is the source of almost all evil in the food world.  I,  being from Wisconsin, and having grown up in Reedsburg, WI, the "butter capital of the world" when I was growing up, do not think butter to be quite so evil.  I can live without it ... but it's a natural food - it's wholesome, our ancestors have eaten homemade butter for an eternity ... in moderation I have a really hard time thinking that butter is an evil food.  Margarine, in my mind is evil... I avoid it as much as humanly possible - it's not natural, it's artificial and icky... Never-the-less, I'm open minded to Barbara's dislike, and I present to you ... in it's debut to all of us ...

Cream of Green Vegetable Soup - the book we're copying it from says this will feed six

The soup base :
2 1/2 cups chopped onions .60
1 garlic clove, minced .05
3 cups diced potatoes .70
1 cup chopped celery .25
3 cups water

Spinach additions:
10 oz fresh spinach, rinsed, tough stems removed.99
1/4 tsp nutmeg.05
2 tbsp chopped fresh basil or 1 tsp dried.15
1/2 tsp minced fresh thyme (1/4 tsp dried).05

2 cups Buttermilk (2 TBSP vinegar + enough milk to make 2 cups).40

In a soup pot, combine the onions, garlic, potatoes, celery and water.  Bring to a boil, then cover, lower the heat, and simmer for 20 minutes.  Add your chosen combination of green veggies and herbs and simmer for 10 to 15 minutes more, until the vegetables are tender.  Working in batches in a blender or food processor, puree the soup with the buttermilk return it to the soup pot.  Add salt to taste, reheat, and serve.
per 10 oz. serving:  122 calories, 5.5 g protein, 1 g fat, 24.1 carbs, 3.2 g total dietary fiber


We're also recommending Egg Salad Sandwiches:

8 eggs .70
1 tsp prepared mustard.10
2 Tbsp reduced fat mayonnaise (try the kind with olive oil in it if you're shopping outside the Aldi).15
1/2 tsp paprika.05
4 tortillas or pitas or bread .50
put eggs in a pan cover with cold water totally cover eggs, bring to a hard boil over high heat.  Cover, shut off heat, and let sit for 15 minutes.  Drain, cover with cold water, sit for 15 minutes, and remove - refrigerate.

Remove shells from eggs (put them in your garden or plants!)
throw 4 yolks away, but th.e 8 egg whites and 4 egg yolks into a bowl and mash.

Combine with 1 tsp prepared mustard and the desired amount of maonnaise (start with 2 Tbsp).  Mix in 1/2 tsp paprika, and serve on whole wheat bread (or toast!).  I must confess, as you can see in the picture, I used a wrap - it was wonderful!

Breakfast Burrito $2.27

a SUPER easy dinner that is oh so healthy... and yummy.  Really, the only part that gives this the "breakfast burrito" title is a) the recipe book (Eating For Life) that I borrowed it from, and B) the views of Americans that Eggs are for Breakfast...get over that misnomer and ENJOY!

4 Breakfast Burrito
4 (8 inch) tortillas .40
4 whole eggs .32
8 egg whites.40
some lettuce .10
8 Tbsp (1/2cup) black beans (can be "refried").30
4 Tbsp cheddar cheese shredded .35
1 cup Salsa.40
$2.27

Whisk the egg and egg whites together - pour into a large warm (med-low heat) skillet sprayed with olive oil cooking spray - stir gently and occasionally until "set".

While the eggs are cooking, place lettuce on the tortillas, followed by 2 Tbsp black beans, then, when finished, top with cooked eggs, shredded cheddar and 2 Tbsp of salsa on each tortilla.  Roll up, top with a small amount of sour cream if desired and share the rest of the salsa amongst your family.

try some of that left over cilantro you have from Sunday night too!  See you next time!

Saturday's French Toast, bacon & Fruit Smoothie $5.06

Oh, if I could only have french toast every day ... I love french toast.  French toast with thick texas toast, with white bread, with dense whole grain bread, with homemade bread, with a loaf of french bread or baguettes ... what ever the bread, it matters not to me, I LOVE FRENCH TOAST!  Now, if only the rest of my family felt the same.. they're more like once a month folks - and frankly, since we're trying hard to not repeat our entrees during this project, the family is actually quite pleased that French Toast is being served now...they're naively thinking that just because it's off the dinner menu, it's off their menus entirely - oh well...

French Toast (for four)
4 egg whites .36
2 whole eggs .18
1/3 cup water
1/3 cup skim milk .10
1 tsp vanilla extract .15
1 tsp cinnamon.05
1 tsp sugar (or sugar replacement of choice).05
8 to 12 slices of bread - depending on what kind it iscooking spray .40
1 cup syrup .30
Total: $1.59


combine the eggwhites, eggs, cinnamon, sugar, water and milk.  whisk to combine (cinnamon will float, it's ok!).  heat pan to medium low heat ... remove from heat, spray with cooking spray, and return to stove top.  Dip bread into egg mixture one piece at a time, and put bread into frying pan.  Cook for about 90 seconds to 2 minutes, flip.  Cook another 90 seconds to two minutes.  Remove from pan and place on a piece of paper towel lined platter.  Invert a serving bowl over platter to store heat... repeat the dipping and frying pattern until you're done.  mmm.

Bacon .99
Cook.  -- oh, you were hoping for more...
option one - place bacon in a room temp pan, turn on heat to medium low, and cook until it needs to be flipped - probably about 4 minutes depending on thickness of pan and type of stove and desired doneness of bacon.  Flip, and cook second side - another 3 or so minutes.
option two - microwave.  Place four or six strips of bacon at a time between two layers of good papertowel on a microwave safe plate.  Cook about 3 minutes until the paper towel is saturated with bacon fat.  Bacon will crisp once you remove the paper towel.

(I must admit I NEVER cook bacon in the microwave, but I'm trying to remember how I watched my good friend Cathy make it... I was really impressed by how good her microwaved bacon turned out.)

Fruit Smoothie

In a blender container, combine the following:


1 container (6 oz) yogurt of choice .49
1/2 of a 16 ounce package frozen fruit of choice (mixed fruit is best!)$1.49
1 cup liquid - apple juice, milk, water, white soda,  or some combination there of  (we don't recommend vodka at this time of the morning).50

10-12 ice cubes.
total $2.48
put yogurt in the blender first, then frozen fruit and some of the liquid - cover tightly and turn on blender to whatever medium is on your blender... blend for 20 to 30 seconds, shut it off, remove cover and stir.  Replace blender cover and repeat process until your smoothie is as smooth as you like it.  Serve.

Saturday Panini $2,03

OK the long, long days of February, are coming to a close, but not soon enough for this sun loving gal. My sons 5th grade teacher told me, even kids in school in the midwest get bummed out in this dreary weather, and February is notorious for being the most unproductive in terms of their schoolwork. So consequently the highlight of our day today was lunch. Paninis excite everyone b/c they get to operate the panini maker, and choose their sandwhich, within reason of course. I dont want to run to the store, so they must work with what I have in my house. Today, everyone went for michaels request- scrammbled eggs, bacon and cheddar cheese all baked on a tortilla. kind odd a bit messy, but non the less it all got eaten.

Here goes-
3 eggs, 3 egg whites .48
6 strips of turkey bacon .45
1 cup shredded cheddar cheese .60
1/4 cup milk .10
4 tortillas .40
total $ 2.03

crack all 6 eggs in a bowl, removing 3 yolks. wisk with milk until smooth
add salt and pepper
heat skillet on medium
pour in eggs, and scramble until light and flufy
remove from pan
place bacon in same pan, cook until crisp
heat up panini maker
evenly devide egg on each
top with 1/2 pieces of bacon, sprinkle with cheese
fold in half
place on panini maker for 1 minute

remove and eat it up!!

Clean Up Fridge again Omelette .91


Omelette time again! I decided to try to make a lighter omelette for lunch because I knew I was going to dinner, and I also was going running in the afternoon and didnt want anything heavy. So I cut out the yolks and made an eggwhite omelette. It came out light and fluffy and super healthy.
4 egg whites .36
1/8 cup mozarella cheese .20
1/4 cup spinach .10
1/4 cup red pepper .10
1/8 cup onion .05
1/4 cup milk .10
sat and pepper to taste
Total: .91

Seperate the egg yolks from the whites, discard yolks.
dice vegetables, combine in a bowl- vegetables, cheese and eggwhites. Whisk together.
pour into small baking dish, cook for 30 minutes at 350.

this serves 2.

Monday Night Spaghetti Carbonara(bacon and egg dinner ) $3.04



















This is a classic Italian dish that I can remember eating since I was a little girl. The beauty of this meal is the speed at which it can be prepared. The recipe calls for 4 whole eggs, however, I usually cut the yolks in half by using 2 whole eggs and 4 egg whites. The meal packs a ton of protein, calcium and fiber.


1 package spaghetti .99
1 cup frozen peas .50
3 slices turkey bacon .40
1 small onion chopped .25
2 whole eggs, 4 egg whites .50
1/2 cup parm cheese .40
salt and pepper to taste

Total: $$ 3.04


Cook pasta according to the directions. Three minutes before pasta is supposed to be done, add the green peas to the pot.

Meanwhile cook bacon in a large saucepan on medium- high until crispy. remove bacon from pan and discard all except 2 teaspoons of drippings. Add onion to the pan and saute for 3 minutes in the leftover drippings.

Beat eggs, drain pasta and peas, and toss beaten eggs and pasta in sautee pan with onion.

Saute for 3 minutes.

Tuesday's Ham and cheese fritata $1.75



No School Monday, so I decided to make the kids the fritata for lunch instead of dinner, since they were all starving by 11am and didn't want sandwhiches. I like fritatas b/c they are usually baked not fried, and so much easier to prepare. Also, they can be made with many different ingredients, depending on everyones taste. Today, I decided on ham and cheese, since I had left over sliced ham from school lunches. I threw in some spinach for some vegetable nutrition and this meal was packed with calcium, protein, vitamin A and K, folic acid, so basically all good!

Recipe: preheat oven 350
8 eggs .65
4 slices of swiss cheese cut in small pieces .40
6 slices deli ham cut in small pieces .50
16 spinach leaves .20
s and p
Total $ 1.75

In a baking dish crack eggs and beat until smooth consistency
add ham, cheese spinach snd s and p.
bake 15-20 minutes
