Thursday's Lemon $7.20

Lemon Chicken

2 Tbsp flour .10
2 teaspoons grated lemon zest.02
1 Tbsp lemon juice .10
1/2 tsp. cumin.05
salt
pepper
1 to 1 1/2 punds chicken breasts $4.90
2 Tbsp olive oil .30
1/4 cup thinly sliced onions or 2 Tbsp green onions.20
1/2 c. flat leaf parsley, chopped or 2 Tbsp dried parsley OPTIONAL.20
1/2 cup dry white wine.25

Combine the flour, lemon zest, cumin and 1/2 tsp each salt & pepper.  Coat the chicken with the flour mxture.
1 lb frozen green beans $ 1.19
total $ 7.20
Heat 1 Tbsp oil in a large skillet over medium high heat.  Cook approx. 1/2 the chicken until golden, approx. 2-3 minutes per side.  Remove to a plate.  Repeat with other half chicken, and remove to a plate.

Wipe skillet, heat remaining oil over medium heat  Add onions and cook until soft about 5 minutes.  Add parsley, wine and lemon juice and bring to boil.

Nestle the chicken in the wine/onion mix.  Simmer, covered, until the chicken is cooked through, 4 to 6 minutes.


While simmering the chicken in the yummy lemon wine sauce prepare the asparagus according to package directions.

Plate beautifully together and serve with a smile... you're serving a wonderfully delicious and very healthy meal!

P.S. those onions are so amazingly good ... Joe and I fought over them!

  1. I LOVE this chicken recipe. It is SO SO yummy. Ellie and even Jacob asked for more (ok, so I gave them each four bites the first go round). And since Aldi was out of asparagus when I went in my whirlwind trip on Sunday, I had to substitute green beans, but my girls love green beans, and so long as I serve them "PLAIN", Jacob will eat them too. A most welcomed surprise as everyone joined the clean plate club! We celebrated with Apple Crisp ... so easy in the microwave!

  2. Lemon chicken dinner loaded with protein, omega 3's, vitamins, and really inexpensive. When my neice Amanda found out it was lemon chicken night, she insisted on staying, and licked her plate clean. For fun, i priced this meal out at a popular, and very moderately priced rest in the chicagoland, and it came in at $14.95 for one serving.
